Beat the eggs in a bowl, then stir in the flour and the milk, followed by salt and pepper to taste, to form a thick batter. Now add the mushrooms and onion and mix together. Pour about 1cm / ½ inch of oil into a frying pan and bring to frying temperature. Carefully add the mixture, a tablespoon at a time. Fry the beignets gently until brown and crispy on one side, turn, and cook the other side. Serve hot.
Pan-fried Mushrooms with Onion and Cream
A quick and creamy dish to be served on toast or with a little boiled brown rice.
FOR 2 WITH RICE OR ON TOAST
Peel a small onion, or a couple of shallots, and chop finely. Put into a frying pan with a tablespoon vegetable oil and a large knob of butter and fry gently over a medium heat until the onion starts to turn golden.
Cut 450g / 1lb wiped mushrooms, plump white cups if possible, into quarters. Turn up the heat and add the mushrooms to the pan. When the mushrooms have absorbed most of the butter and oil, turn down the heat and season with salt and a few turns of the peppermill. Cook the mushrooms for 3 minutes, shaking the pan from time to time.
Pour in a small carton of double cream and simmer for another couple of minutes before serving.
